Other Fat Removal Methods
Many types of fat separator devices have been invented to solve
the age-old problem of how to efficiently separate the fat from
the soup. Fat skimmers unearthed at Pompeii are shallow flat-bottomed,
brass ladles that were pressed into the broth until they filled
with the floating fat. These ancient skimmers function like the
spoons and ladles that most people still use today since most home
kitchens do not have a specialized gadget to skim fat. Since the
layer of fat is often very thin, it is very difficult to skim it
off using a ladle without also having excessive broth also spill
into the ladle.
Refrigerate.
A time-honored, very effective method to remove fat is simply
to refrigerate until the fat hardens on the surface and then it
is a simple matter to remove it. However, this takes a lot of time
and you have to have room in the refrigerator.
Modified ladles.
Some fat skimmers are ladles with the upper edge of the cup
having vertical or horizontal slots, holes or extensions intended
to make fat separation easier and to exclude floating vegetables.
while these modifications do help to exclude floating matter these
devices are still very difficult to use and they hardly work any
better than an ordinary ladle.
Drain type ladles.
Other fat skimmers are ladles that have a drain to release
broth that has been captured while skimming and vertical slots to
exclude floating vegetables. These devices are an improvement over
an ordinary ladle. The vertical slots do push away the floating
vegetables and the broth that is accidentally skimmed can be returned
to the pot. The process is still time consuming and the devices
are impossible to clean.
Pitcher type skimmer.
Another type of skimmer is a pitcher which has a spout that
drains from the bottom to decant the broth from underneath the floating
fat. This device requires that the hot soup be poured into the pitcher
which is difficult and dangerous, and if your soup has vegetables
in it or for a thick stew or gravy, this pitcher will not work at
all.
Absorbent wick type.
Some fat separator methods include floating a paper towel or
other absorbent material, such as bread or an absorbent brush or
wick, onto the top layer of the soup to absorb the fat layer. Anyone
